As we move through the Holidays, it’s hard to resist downing all those yummy festive dishes. Therefore, we thought it would be only ‘fit’ to catch up with our Nous girl, Maitlyn, to find out what exercise means to her, as well as to pick her brain on her must-do fitness plans to work off those extra holiday pounds. Take a look at the questionnaire below to see what she has advised!:

1. Why do you work out?

In the beginning, it was pretty straightforward. The more physically fit I became, the more my self-confidence in my appearance grew, which in turn helped me book jobs more frequently.
But once I got into the habit of working out regularly, I realized that it was becoming therapeutic. After a long day of driving from casting to casting and sitting on the 101 or 405 for an ungodly amount of time, the gym became more of a reboot. It feels nice to park the car, lock your phone away and focus solely on yourself. A quick workout is a great way to relieve some stress. In short, the gym = my sanity.
2. At what age did you start monitoring your health?
If I’m being honest, it wasn’t until my mid-twenties. It was then that  I realized that I needed to hit the gym frequently if I wanted to keep up my ongoing love affair with food. TBH I miss my teenage metabolism… RIP.
3. In a typical week, how many times do you exercise?
 I try to exercise at least 5x a week – which is a mix of instructor-led classes and at-home workouts.

4. Where do you typically work out?
I’m an avid ClassPass member! CP makes it easy to access gyms whenever and wherever you are. My membership lets me attend 10 classes per month for $115. I can usually be found at a Pilates reformer studio somewhere in the LA area!

5. What do you find yourself doing the most for exercise? (lifting weights, walk, run, hike, swim, dance, aerobics, pilates, play a team sport, etc.) (you can pick more than one)

I’m going to sound like a broken record here but PILATES REFORMER. Try a class to see (and FEEL) what I’m talking about for yourself! Pilates has been the one workout I’ve found to achieve that long and lean body type, without the added bulk! I’ll also usually add in a hot yoga or hip-hop dance class each week to sweat it out (if early 00’s hip-hop comes on I’ll dance ’til I pull a muscle or embarrass myself).

4. What athletic brands have you worked with since joining Nous?

I’ve been lucky enough to work with a number of active brands through Nous such as Nikki Bikki, Carbon 38, Vimmia, Target, Nordstrom, Champion, and Reebok.
They’ve been great to work with and each has a unique style. It’s always fun trying to keep a calm face while holding a one-legged backbend. Also, it doesn’t hurt getting to work out on the job!
5. How do you feel at the end of the day post-exercising?
Sore and hungry. Just kidding, kinda. I always feel a sense of accomplishment post-workouts & know that I need to invest in myself in order to keep up in this industry. Exercise is crucial for both your mind & body.
6. What is the top reason that may deter you from exercising?
Brunch. I’m an easy sell to ditch the gym if my friends propose a fun brunch, which tends to happen a lot in LA…

7. Are there any good books/videos/blogs that you would recommend to someone that is just starting out?

I’d definitely recommend home workout videos/apps for someone that’s just starting out. You can do them anytime and at your own pace without feeling self-conscious until you’re ready to get back into the gym. My go-to home workout is an 8-minute ab video from the 80’s (picture AC Slater in spandex), followed by 8-minute buns. 13 million hits can’t be wrong!
8. What was the greatest obstacle that you overcame in your workouts?
More than anything, it was not being afraid to fail. With ClassPass, you’re constantly walking into new classes with new instructors & each of them have unique methods & techniques. It can be intimidating walking into something new each day knowing that many of the participants are regulars. I have to remind myself not to compare myself to others, but sometimes if you miss a move, just copy your neighbor.

9. Is there anything else that you would like to include in regards to health that you feel would benefit Nous’ readers?

The number one thing and quite possibly the hardest thing to do is to not compare yourself to others! It’s only natural to have insecurities, but the most important thing to do is to focus on yourself.
It’s refreshing to see the industry and brands increasing their focus on both mental and physical health. It’s something that has been overlooked for a long time so I hope that this continues to be something that we support and celebrate.

A select group of people in the universe- early birds, we’re looking at you- actually become excited for the morning when all is quiet and a full day ahead awaits (cue birds chirping and Pharrell’s “Happy” soundtrack). Until then, we’ll make it more of a recurring pattern by investing in simple, old-school curlers, perfect for fighting frizz and breakage that too often accompanies curling irons and blow driers.

Another weapon in our arsenal is dry shampoo: the go-to tool for creating that perfectly-blow dried illusion. If you’ve used up all of your allotted non-hair wash days, there are a bunch of wet-to-dry hairstyles that you can actually pull off without looking like you’re auditioning for an Orange Is The New Black episode. We love a messy bun or a chic chignon, both of which air dry nicely into tousled waves for an “I’m born with it” effortless look.

Next up: put on your game face! What better way to wake up out of your morning slump than with a fierce lipcolor? Applying a bold red lip immediately awakens your face and elevates any outfit in a matter of seconds. Can any other product in your makeup bag accomplish that?

Adding some color to your wardrobe can also brighten up your mood for the day. While you may naturally gravitate to the black section of your closet, try and liven things up with some bold colors and fun patterns. At my annual LA Friends Thanksgiving a few weeks ago, one of my friends gently shamed me for wanting to throw out all the bones from our delicious turkey. “You can make bone broth out of them!” she said. What? How would I go about doing that, and why do I want to do it? Also, isn’t that gross?

If you are a New Yorker, standing in line of trendy Brodo restaurant, waiting for your to-go cup of bone broth – you already know what all the hype is about. If you’re just hearing about bone broth for the first time, like me, let me tell you why this magic sustenance will be your favorite go-to brew.

Bone broth is made by slowly cooking bones with small amounts of meat, vegetables and aromatics in a large batch of water. It is similar to stock, but is made over a longer period of time (sometimes upwards of 24 hours), thus allowing the natural ingredients from bones – electrolyte minerals, amino acids, gelatin, collagen, and bone marrow, to leech into the broth.

The first records of bone broth being used, come from the 12th century, when Egyptian physicians prescribed it as a remedy from colds and asthma. Bone broth is easily digested, and when made from organic chicken, contains natural antibiotics. Ever wonder why you crave chicken soup when you’re sick?!

It has been shown that consuming a cup of bone broth a day helps reduce inflammation of stomach lining, thus is a great option for when your tummy is feeling under the weather. On top of that, the readily-available nutrients and amino acids in the broth strengthen your immune system and nourish the body. Many people claim that consuming bone broth on a daily basis helps with allergies and autoimmune diseases. And you did hear that I said bone broth contains gelatin and collagen, right? That means stronger hair and better, more elastic skin, as well as stronger nails and teeth.

I have made bone broth from both the left over turkey bones and from organic beef bones that I bought at my local Whole Foods (who knew they sold those?!). I make sure to get organic, free range chicken, turkey or beef. Everything from the bones gets cooked into your broth, so you want to make sure you are eating a healthy animal. I was afraid the broth would taste a little funky, but I have to say using bones from an already cooked or roasted meat makes for a great taste. If you get raw bones from Whole Foods or your butcher, roast them in the oven at 350F for 30 minutes before putting them in the broth. I prefer making the broth in a slow cooker. That way it can be left alone to do it’s thing, and I don’t have to use my gas stove.


2 pounds bones, gizzards, skin
1 onion roughly chopped
3 carrots roughly chopped
2 stalks of celery roughly chopped
1.5 Tbs apple cider vinegar
2 cloves of garlic, smashed
1 bunch of Italian parsley (add during the last 30 minutes of cooking)
1 Tsp whole peppercorns
2 Bay leaves
Salt to taste after the broth is finished.


1. Cover the bones and gizzards with water. I use a 5-quart slow cooker, so that’s about 4.5 quarts of water.
2. Add apple cider vinegar, and let sit for 30 minutes. This draws the nutrients out of the bones.
3. Cook on high for about 2 hours, periodically removing the impurities that rise up to the top. When the broth is brought to a boil, change settings to Low, take the gizzards and skin out of the broth. Remove the bones, taking the meat off them, then return them to the pot. Add onion, carrots, celery, peppercorns, bay leaf and garlic, cook on low for 22-24 hours.
4. 30 minutes before finish time, add the parsley to the broth. This adds an extra kick of nutrients to the broth.
5. Strain the broth over a metal mesh strainer, discarding the bones and vegetables. You can add some more salt to taste at this point. Let the broth cool to room temperature. By that time, there should be a layer of fat at the top. Skim the layer off for a fat-free bone broth! Now store in the fridge for up to 6 days, or freeze for later use.

If made correctly, the broth will become gelatinous while in the fridge. I like to drink the broth hot from a cup, with a dash of turmeric. Turmeric is another anti-inflammatory agent, that’s supposed to be fabulous for your health. So far, I have found the broth to be quite filling, I have it as an in between meals snack sometimes. And my agency did say that my skin looked really good. So, what are you waiting for? Go try it!!

First it was kale, then quinoa, now it’s all about the chia seeds! And here’s why: Chia seeds have long been used by Mayan and Aztec cultures for energy, hydration and their nutritional benefits. Chia seeds are naturally gluten free, contain calcium, omega 3, protein and antioxidants. They can absorb 12 times its weight in water, aiding in hydrations for athletes and us regular folk during the hotter months. Chia seeds are now being used as nutritional supplements, an aid in appetite and as energy boosters.

If you’ve never used chia seeds before, have no fear, here are 5 super fun ways to get started with this amazing super food.






Put the seeds in some water, drain the water off and leave in a glass container for 2-3 days. Every 12 hours rinse with water, and drain the water off. After the seeds have sprouted, add them to your salad!





  • 2tbs chia seeds (soaked previously, or straight out of the bag)
  • 1 cup unsweetened almond milk
  • 1 ripe banana
  • handful of spinach
  • ½ cup of frozen berries ( I use blueberries or strawberries)

Blend until smooth and enjoy!





  • 5 tbs chia seeds
  • 1 cup unsweetened almond milk (can substitute soy or coconut)
  • 2 tbs cocoa powder a bit of natural sweetener such as honey or agave

Put the ingredients in a mason jar, mix thoroughly and leave in fridge for at least 4 hours or overnight. I like to try and mix the pudding every few hours to avoid the mixture clumping together. Eat for breakfast, or as a yummy desert!

Just in time for upcoming fall holidays, here is a yummy gluten free, mineral and omega 3 packed Pumpkin desert, borrowed from

  • 1 medium ripe plantain (7oz or 200g once peeled)
  • 1 cup pumpkin (8oz)
  • 2 tablespoons chia seeds
  • 1/2 teaspoon baking soda
  • 1 teaspoon baking powder
  • 1 1/4 teaspoon cinnamon
  • 1/8 teaspoon cloves
  • 1/4 teaspoon ground ginger
  • 1/4 teaspoon nutmeg
  • 1/4 cup coconut sugar (1 1/4oz)
  • 2 tablespoons coconut oil (1oz), liquid

Pre-heat oven to 350 degrees. Place all dry ingredients into a bowl, whisk the ingredients. Next peel your plantain and puree in a food processor or blender. Once pureed add into dry ingredients bowl. Stir till all combined. Add in pumpkin puree and coconut oil. Batter will be a little thick. Grab your pan and scoop your batter into each hole. Or into your 8 inch pan.I lightly oiled my pan with coconut oil. Bake for about 20 minutes or till toothpick comes out clean.

Whether you’re based in Los Angeles or not, there’s a good chance that you’ve heard of Runyon Canyon. According to their official site, “Runyon Canyon is a 160-acre park smack dab in the heart of everything – a stone’s throw away from the historic Hollywood strip.” The park provides various hiking trails, scenic outlooks, free daily yoga classes and areas for meditating. Angelinos can often spot fitness instructors, celebrities and our models of course while hiking.

  • Walk at your own pace. There are several hiking routes that vary in difficulty where some are more challenging than others. It’s important to recognize what works best for you then progress to the others. Continue on to Runyon Canyon‘s site to learn more about each hiking route.
  • Do not get discouraged by those who seem to be pros at it, instead be inspired!
  • Always remember to stretch! You can prevent serious injuries by stretching prior to working out.
  • Get a walking buddy, it’s always great to have someone to push and motivate you to make it to the top.
  • Bring a camera! There’s no way you can hike this beautiful canyon without taking pictures.
